GRAHAM – FISHERMANS BAY GARDEN (AKAROA, NEW ZEALAND)

Nestled in the heart of an ancient volcano, Akaroa is New Zealand’s oldest French settlement – a charming harbourside village where the French flag flies above quaint bistros and bakeries. But just beyond the picture-perfect town lies something truly extraordinary. Fishermans Bay Garden is a stunning coastal masterpiece, blending untamed beauty with deliberate design. It’s the work of Jill Simpson, a landscape designer who was living in Christchurch when she met and fell in love with a dairy farmer, Richard, who already owned the property. Now, the husband-and-wife team live here full time and the garden they’ve created is truly one-of-a-kind. Graham’s meeting up with Jill and Richard for a tour of this stunning gem of a garden.

Paired with the ultimate retro side dish, creamed spinach, it’s so much better than what you get from the freezer aisle…and a lot easier to make than you might think.
