I’ve done some research and here’s what survived from the early years and can be watched on the HeyHey website.
1974: 4-Part Holiday Special.
1977: 5 Episodes.
1979: 8 Episodes.
1980: 13 Episodes.
1981: 13 Episodes.
1982: 36 Episodes.
1983: 37 Episodes.
It seems they started saving a lot more episodes come 1982.

A bit of HHIS trivia from a fan on Facebook.
In 1976, Daryl was hosting Bandstand (where he interviewed Abba), Cartoon Corner and Hey Hey . The workload was too much and Hey Hey was cancelled for the year. It was replaced by Hey Hey It’s Saturday Cartoon Festival , which was just continuous cartoons.

Has anyone seen footage or the full episode from April 30, 1994? I understand there were crosses to TasTV in Burnie for aggregation and I’d love to see it. I think Jo Beth Taylor was featured. Cheers.

The NFSA has a 12 and a half hour recording of the first day of aggregation that was deposited by WIN. It includes:

You’d probably have to visit the NFSA to watch it, if it is available to be viewed.

The full episode can be viewed on the Hey Hey website as long as you pay for a premium membership to watch the full episodes. I’ve forgotten what episode number in 1994 it was, but I’ll tell you here so you can access it easier if you want to try and access it through there.
You could also try making an access request through NFSA to have it viewed at the State Library in Hobart or any other capital city.
