Many of the characters are negatively stereotyped, if they get rid of Apu or change him, they’ll also need to change Fat Tony and Reverend Lovejoy and Bumble Bee Man. ---

Family Guy and South Park (!!!) does it too. It’s low brow and it’s what those shows do, they do gay stereotypes as well. They mock everyone, now if you want to do a pile on Al Jean though I’m up for it. ---

Then it’s just not the show for you. The entire original point of the Simpsons was to be a cynical look look at American culture, at a time when few other programs would dare poke mud at the U.S. The fact that this was animation made this possible and slightly more palatable. Everybody in it is a stereotype, bratty school boy, school principal, filthy rich business owner, the bar owner. For the viewer the idea that was that you already knew the character the moment they were introduced. As time (a very long time for a tv series) moved on, some characters developed much more in depth personality and history. Seriously, I don’t really know what the problem with Apu is. A stereotype isn’t necessarily bad, it’s just a stereotype. As far as I recall, Apu is accepted into Springfield society, attending parties and functions and has his helpers and supporters along the way. ---

Although, it’s not up to him to “step aside from voicing Apu”. It’s up to the producers to evolve the character into something that is not stereotypical or offensive. Leaving him out completely is not the answer. ---
