The vast majority of people do not watch all three shows back to back.
If anyone found themselves watching the third instalment of DWTS cross promotion, perhaps that’s their sign to go make some lunch.
For the talent, they probably appreciate a morning off rehearsals.

The point was more why can’t they just use the one interview, multiple times/edit it?

Exactly.
The only thing I think they could have done better is announce them over two days.
Have 6 interviewed one day and 6 on the next. But maybe thry did it this way to be able to have all the publicity photos done with everyone on one day too.

I think you lose the impact of having all 12 together as the first look at the cast if you split them. Plus we wouldn’t want anyone on here to complain about more segments
